Italian Sausages in Hot Tomato Sauce with Polenta


Husband was complaining to me the other day that I've slagged off on making dinners lately. The problem here is that he's so used to coming home to a piping hot plate of food that he doesn't get that this doesn't happen by miracle and I too come home from a full day's work and don't always feel like putting together a well rounded plate of food. Now let me tell you this man does not go hungry..it's just that sometimes his dinner's aren't the fanciest and sometimes he will have to make his own...must be nice. Anyhow, today was one of those days that I just didn't want to make a meal..but I'd told him I'd make this for him and it is for the blog...I had a inner argument with myself. You see I had an eye exam this evening...had to go to work early so I could leave early to make my 5:10pm appointment. This actually was going to work in my favour tonight I thought because my evening would go like this...get eyes examed, stop at grocery store, be home by 6pm to make dinner then - and now here's the truly exciting part - meet ny new nephew!!!! Born yesterday!!! Here's how thing did go..

1. Get lost on way to optomitrist
2. Find office at last second
3. Spend 2 hours at eye doctors
4. Leave with fully dialated pupils and bitterness
5. Have battle with innerself about if I should be making this recipe tonight because I'm running so late
6. Become paranoid that Husband has come home and is at that moment visiting new nephew without you leading to a lifetime of resentment and bitterness that you'll never forgive and may have to get divorced
7. Decide you may aswell go to grocery store because you're f*cked now no matter what
8. Arrive home to find Husband is still at work and new nephew is not home from hospital yet
9. Start making recipe while stressing about when you will finally get to see this new little face.

So as you can see I had a busy night and I was a little distracted. Despite all this though I was able to make this recipe with little incident and Husband really enjoyed it. I'd never made polenta before but it was straight forward enough. This will take you about 20 min to cook, start to finish and is a nice little change from the ordinary. Or at least it was for Husband!
